February 29, 2016 Over and over and over

Dear Friends,
 One study and report after another tell us how important vegetables (and fruit) are to the human well being.   I know people that buy the most outrageously expensive vitamins and yet will shun the stems of parsley on their plates thinking it’s just a ‘green thing’ and pass up scads of valuable fat soluble Vitamin A!
Here’s a short statement from a recent one:
“You should aim to get a dozen servings a week of greens – including rocket, spring greens, kale, young salad greens, mustard greens, sorrel, spinach and swiss chard.
Of all the food groups analysed by a team of Harvard University researchers, greens turned out to be associated with the strongest protection against major chronic diseases.
That meant about a 20 per cent reduction in risk for heart attacks and strokes for every additional daily serving. Yet today, only about one in every 25 people even eat a dozen servings in a month, let alone a week.”
Like the parsley that gets ignored, kind of same thing with the ‘lowly’ radish.  Now, there’s radishes (big, tough, hot in hot weather) and there’s the sweet crisp ones in winter and early spring.  So hope you enjoy these cuties.  It’s a lot of bending over to get them to you!
