Our whole culture suffers from an industrial food system which has made every part disconnected from the rest.  Smelly and dirty farms are supposed to be in one place, away from people, who snuggle smugly in their cul-de-sacs and have not a clue about the out -of-sight-out- of mind atrocities being committed to their dinner before it arrives in microwavable four-color labeled plastic packaging. Industrial abattoirs need to be located in a not-in-my-backyard place to sequester noxious odors and sights.  Finally, the retail store must be located in a commercial district surround by  lots of pavement, handicapped access, public toilets and whatever else must be required to get food to people.

Dear Friends,
     Thank you to all that let me know how surprised and pleased you were with the French Sorrel from last week.  Several of you expressed ‘hearing’ of it but didn’t realize how refreshing and easy it was to make classic French Sorrel Soup.
    We’ve been fighting off unprecedented numbers of rabbits and squirrels this year that are decimating our newly planted beans and cucumbers.  It’s such a heart break to do all the expense and work of planting a crop and then to have it disappear over night.  We’re putting netting over everything, block any holes on entry we can find and even getting up and doing rounds in the middle of the night to scare them off.  Nothing is working.  It’s war!
     Our beet crop is still doing well.  I learned something interesting from a shareholder that said she didn’t like cooking beets although she liked them very much.  Now, knowing cooking beets is one of the easiest  things to do sp I was curious as to what the problem was.  She said she hated peeling the raw beets and getting the staining juice on her hands!  For once, an easy solution.  You do not have to peel beets before either simmering or baking!  Either just put them in boiling water until tender and then cool. The skins slip off quite easily without any fuss or bother.  My favorite way is to bake them (caramelize) in a hot oven when cooking other dishes.  The natural sweet flavor is delicious.
