Soups are a great way to introduce a lot of vegetables to kids. Stir-fries, too, because they contain so many different shapes and colors.

What’s for dinner? Is that a phrase in your household? Sometimes ideas come to you right away and you’re set to go. Other times, with probably a groan, it’s “well, I don’t know yet”. Let’s face it, cooking and eating at home is both a blessing and at times, a curse. But this week should be pretty easy.
Bok choi is one of our favorites for flavor, crispness, and all ’round ease. Good peanut oil is a main stay in our house so if you have some, suggest you try it for this dish.
Stir Fry
Chop your bok choi, scallions, green beans, turnips, squash and celery (with some leaves too). Heat a couple of tablespoons of oil in a skillet, toss in veggies and stir fry on medium high heat for a few minutes. The trick is to not over cook. We like to add a little teriyaki sauce (it does have a little sugar in it – splurge) but adds nice flavor. It’s ready to go! If you’d like, you could always add tofu, tempeh or small amounts of meats you might like – great way to use leftovers. And that’s it! We like our stir-fries with Wehani rice –it’ll be available soon on the Green Store, or brown rice is good too. Trick to stir frying is not to over cook!
