Beet Tops With Grapefruit and Avocado

Ingredients
- 1 Large Beet greens Fresh
- 1/2 Medium Avocado
- 1/2 Medium Grapefruit
- 1/2 Tablespoon Red wine vinegar
- 1/2 Tablespoon Oil Olive, grapeseed, coconut
- Salt to taste
Servings: Serving
Instructions
- Roll up your beet green into a tight roll and slice very thin (*chiffonade)
- Peel and chop avocado and grapefruit into bite size pieces
- Toss all ingredients together in bowl, salt to taste and enjoy! Yum

Cilantro Basil Vinaigrette

Ingredients
- 1 Cup Cilantro, fresh, tough stems removed
- 1/3 Cup basil leaves fresh, stems removed
- 1 Clove garlic peeled
- 1/4 Cup Red wine vinegar
- 3/4 Cup olive oil extra virgin
- Sea salt and pepper
Servings:
Instructions
- Combine all ingredients except olive oil In food processor or blender and process until smooth.
- Scrape down sides of bowl.
- Restart processor and add olive oil until incorporated.
- Transfer to a bottle and shake well before use. If refrigerated, allow to come up to room temperature and shake well before serving.
