Dear Friends,
We just had a storm cell go over us, sending us scrambling for cover and now 20 minutes later, our glorious San Diego blue sky is back.  So beautiful.
Some of you will be receiving Claytonia, a petite delicate bunch of greens with thin lemon/lime flavored stems and small round basil leaves.  They are mild and sweet, high in Vit C, beta carotene and protein.  Also known as Miner’s Lettuce because during the ‘gold rush’ in California, this plant would grow wild by the stream beds in the early spring and be one of the first fresh foods of the winter.
Cooking is not recommended as it’s a delicate plant.  Instead, make a nice salad with some of these suggestions:  hard boiled eggs, sliced cooked beats, sliced baby leeks, walnut oil, red wine or sherry vinegar, toasted walnut pieces, salad oil, feta or goats cheese, tomatoes.
