Dear Friends,
     I’d say it’s pretty safe to say that most people have the basic knowledge that fruits and vegetables are good for us.  It’s the next leap that’s so hard for so many…preparing them in a way that makes us want to eat them!  Now, an apple or banana..no problem.  But what do you do with two bunches of green things in your delivery bag and you’re not even sure what it is.  That might be this weeks dilemma when you unpack and your list says one arugula and one French sorrel but which is which?
     First thing is to take a little piece of each and analyze your flavors.  If it tastes tangy and a little sour, congratulations. You’ve just identified your French sorrel.  For the other one, same tasting.  Only this time it should taste first a little nutty then secondarily, a little spicy like a mild radish.  Viola..arugula!
   Try this classic easy recipe for French Sorrel soup..(don’t use an aluminum pan with sorrel) -you’ll need a couple of good fresh eggs for full body flavors:

    Arugula is even easier to enjoy as it’s mostly used fresh, not cooked.  One of our favorites (aside from sandwiches and in salads) is the base of the plate, then couscous, then a main dish like grilled fish, tofu or chicken on top with a little tarragon butter sauce.  For more ideas:

Also, both French sorrel and arugula make easy and delicious pestos.
     Cauliflower is easy to steam, bake, broil, grill or stir-fry but we especially enjoy it fresh in a salad.  A favorite and easy dressing:
Mix 1 tablespoon of capers (with liquid), 1 T vegan mayonnaise, 1 T sour cream, 1 teaspoon catsup, 1 T chopped scallion, chives or onion, a little salt and pepper.  Chill and then toss with small chunks of cauliflower.  Yum.
