Dear Friends,
Here we are..the last week of August and hopefully the warm weather will retreat soon. The flower colors are telling us fall is coming. Perhaps it’s just the years that are adding up but I sure feel defeated when working the growing beds and it’s just plain ole HOT. And then of course, as the day wraps up, if you haven’t thought ahead, it’s the “what’s for dinner” in your head. I have these times too..open the refrigerator, look inside, open the vegetable drawers..and groan. No inspiration. But the other night, I took everything out to clean the drawer and had a frittata moment. There was celery, zucchini, scallions, a potato, bell pepper, serrano pepper, an old apple, couple of stalks of bok choi, sad looking Italian parsley and something else..can’t remember. So roughly chopped them up, put through the food processor and then into a bowl. From there a little pepper, Bragg’s (see Green Store to order), a couple of beaten eggs and enough bread crumbs to hold it all together. Formed them into patties, dipped in crumbs on both sides and fried them in a little Omega Coconut butter until crusty on each side and served with some sour cream and a big salad. It was a great little dinner! So if these moments of brain mush take over, just take out some veggies and wait for inspiration..you just might surprise yourself.
