Dear Friends,
Looks like we’re going to have idyllic weather for the next few days and then more moisture moving in until early next week. Although rain wreaks havoc with our necessary field work, it’s all much appreciated.
One of the dishes I intend to make this week is Broccoli Soup. It’s easy as can be, basically sauteing onions and carrots in butter (I love clarified) with seasonings, add broth and broccoli pieces and simmer until tender (just a few minutes). Grit your teeth and indulge in some good half and half cream to add. Use a blender wand (or blender) to break up into consistency you like and serve. Croutons and cheddar cheese makes it even more inviting. Same technique can be used with the asparagus or the gai-lon (reserve a few of the flowers to sprinkle raw on top).
We like to make our own pizzas and think I’ll use the eggplant (sauteed in olive oil) as one of the toppings. These two dishes and a hearty salad of mixed greens, spinach and good lettuce will make our week easier and full of good nutrition.
